Horseradish (Armoracia rusticana)

Deep-rooted, clump-forming spice plant growing to 0.6-1m high.  Used as a hot flavouring – grated and preserved with vinegar salt and sugar (Horseradish Sauce).  Also a main ingredient in many ‘Fire Cider’ recipes – a concoction of various herbs, spices and fruit in apple cider vinegar, taken through the winter months as an immune system support.

Harvest roots in winter.  It will be almost impossible to get all root out of the ground so snap off top part and plant will regrow from remaining root.  Propagate from pieces of root.  May be better grown in large pot if you don’t want it to spread as it is very difficult to get rid of once established.
